Make sure you reconstitute this cheese correctly. I have tried to speed up the process by not waiting the full amount of time to allow it to fully hydrate. The end result was burnt, crispy shreds of cheese on top of our enchiladas. Yuck.
After adding water, throw it in a ziploc bag, stick it in the fridge for 30 minutes and you have totally normal, functional cheese, that will melt rather than burn.
